Notes on gnocchi

I have always wanted to make gnocchi but was intimidated. Surely gnocchi would involve some complex amalgam of eggs, flour, potato and pasta machine?

Not according to Mark Bittman. Mashed potatoes and flour. Roll them out. Slice and boil them. That's it.

How were they? Like down pillows on the tongue.

The old Italian lady I knew when you were born took each little pillow and rolled it with her finger into a tiny roll.

OH yum...sounds divine.  When I can make real food again, I'll have to try this.
